

Directions
Heat oil in a deep fryer to 365° F. (You can also use a deep, heavy 4-quart pot and a deep-fat thermometer.)
Rinse the fish thoroughly and pat dry, ensuring no water remains. Sprinkle 1/2 teaspoon of the salt and pepper evenly over the fish.
Combine flour, paprika, garlic powder and the remaining teaspoon of salt and pepper in a medium bowl. Stir in egg and gradually mix in beer until a thin batter forms.
Dip the fish in the batter, letting excess batter drip off, and transfer two at a time to the fryer. Cook fish, turning once, until both sides are golden brown (about 5 minutes). *
Make sure to bring oil back to 365° F between each batch of fish.
If your fish is less than 1 inch, reduce cooking time to 4 minutes instead of 5
